Considered one of the best in the world, olive oil from the Mountains of Toledo presents tones ranging from golden yellow to intense green. When tasting, it is characterized by its intense fruitiness and a balanced taste, revealing notes of apple and almond, accompanied by a whole symphony of aromas and flavors reminiscent of fresh and ripe fruit.
They are, naturally, extra virgin category olive oils, obtained at low temperatures and by physical means exclusively, which allows them to keep the taste and aroma of the original fruit intact.
Oils protected by the Montes de Toledo Protected Designation of Origin (PDO) must meet the conditions established in very demanding specifications which regulate their manufacturing process (Reg. (EC) 1187/2000. These specifications cover on all
stages of production and serves as a guarantee of the origin of the product, the main differentiating characteristic, as well as its traceability. The conditions required for
olive trees, harvesting, transport of olives, processing of the fruit, its storage and packaging, without forgetting the physical, chemical and organoleptic characteristics.
