The TEPPAN YAKI is a Japanese grill for cooking, simmering, grilling and flambéing. In solid stainless steel, it allows the cooking of any food usually cooked in a frying pan without adding fat during cooking.
Simply brush the Japanese grill on start-up with very little seed oil using a paper towel. These oils have the property of resisting very high temperatures.
With its two cooking zones (one front and one rear) that can be adjusted separately from 50°C to 250°C, it is possible to sear food very quickly or to simmer it.
Its precise thermostat allows:
- 250°C to sear food quickly and “caramelize” it (transformation into sugar of the starches contained in meat and fish)
- 150°C to cook gently
- 90°C keep warm
- The bell allows after humidification to steam the vegetables and keep all their crunch
This “instantaneous” cooking method retains the juices and flavors inside the products, which prevents the release of smoke usually caused by water vapor and fat.
It is advisable to use grapeseed oil in moderation before cooking.
The gutter around the edge allows you to collect cooking juices during cooking, thus avoiding harmful carbon residues.
At the end of cooking, a simple deglazing (with ice cubes, lemon juice or sparkling water) can effectively clean the grill.
Over time, your grill will take on a "noble" patina, witness to your common history.
Maintenance of the Teppan Yaki
Important Notes:
Recipes are generally prepared more easily with the two heating elements. But they can also be prepared on a single element.
Cleaning the Teppan Yaki is very easy. Immediately after use, when it has become lukewarm again, after removing food residues with a stainless steel spatula, clean the surface with lemon juice and always rinse with clear water.
Remove stubborn stains using a stainless steel or other scouring sponge. Always rub in the direction of the brushing of the stainless steel. To clean the control panel, preferably use a cloth soaked in washing-up liquid and wipe with a clean, damp cloth. Never use lemon juice or Scotch Brite sponge for the control panel.
