Made from the fiber of the Siamese gourd, or candied pumpkin, this filling, not too sweet and slightly fruity, is used in various Spanish and Portuguese desserts. The dough is braided or spiraled, then filled with angel hair jam before being baked until golden brown.
To add a final touch of sweetness, it is sprinkled with icing sugar before serving.
Highly prized for its subtle flavors and its light yet deliciously flaky texture, it goes well with a cup of coffee or tea.
